I use ffmpeg for video encoding, mplayer to watch videos, kino to edit videos, gimp to edit photos, inkscape for design work (it's a vector drawing program), emacs and vim for editing text files, and firefox and konqueror for web browsing. Oh, and I use ssh and rsync to update web pages at my hosting, and subversion for versioned storage of all pages and associated files.

I haven't tried any of the comparable Windows or Mac OS tools (except IE and the horrendously incompatible Windows Media Player), so to me these aren't replacements or alternatives, but "the real thing".
