Making new posts will give you MORE results in the serps when it comes to long tail keywords.
Letting a blog mature can and will give you good information but its up to you what to do with it.
I usually let blogs mature for about 4-6 weeks and then I know at what stage I am with that blog. Then I decide what to do with it in the future. Post weekly or bi-weekly or even daily...
