What Would You Do With 150 Kilograms Of Apples?

Well, I was up this morning at 0700 and started making Calvados... apple schnapps.... 5 months now till fermentation is finished and then it goes to the distillery---

In two weks my grapes will be ready if weather stays the same here... at the moment they have a 65% sugar saturation.... 85% is ideal---

Either calvados or apple wine (cider)...
But I think the fermentation period is way shorter than 5 months...

actually, 5-6 months is appropriate when you add yeast and then after the distilling it will sit in a oak barrel for 2 years.

No, homemade sounds cheap....

I have two varieties I grow..Cabernet Cortis & Cabernet Carol which produce an excellent quality wine. I plan on making a cuvee from these and should be able to wholesale it for about $20 a bottle... as I cannot drink it all alone..Next year I expect about 600 bottles from production and year after ca. 900

Well, it seems you have different methods...
Here the fermentation goes without yeast, but with added sugar... outside... lasts for 4-6 weeks...
Then we distilling it two times...
Yummy!
